Kung Pao chicken recipe

Ingredients

Chicken leg diced 500g

Wife Le original flavor fresh soy sauce 5 grams +10 grams

5 grams of samami sauce

Wife happy sesame sesame oil 2 grams +5 grams

15 grams of dried chilies

Chinese prickly ash 5 g

2 g of salt

5 g cooking wine

15 grams of sugar

White vinegar 15 g

Sweet potato starch 1 g +3 g

6 slices ginger

Onion segment only selected 100 grams of onion white

Peeled ripe peanuts 60 grams

A little white pepper


Method

In a small bowl, mix in:

  • 15 grams of original Tau Tau Sauce,
  • 5 grams of rice wine
  • 5 grams of Mrs. Le chicken sauce sauce,
  • 2 grams sesame sesame oil,
  • 15g white vinegar,
  • 3 grams of starch,
  • 10 grams of water,
  • Mix well to make the sauce,
  • Chop 6 slices of ginger and set aside.

Prepare the material

Add 60 grams of frying oil to the pan. Then add the chilli, fry the oil until fragrant.

 

 

(Note that the dry pepper is easy to burn, do not fry too long)

Next step, add Sichuan peppercorns, fry until fragrant,

Continue to add Sichuan bean paste to the wok and stir-fry until fragrant with Sichuan peppercorns and spicy red oil.

Fry the chicken and until it turns brown.

Finally, pour in the ingredients from step 1

I’m gonna put it on a high heat and cook it for a couple of minutes,

 

If you prefer rice covered with soup, you can save less soup.

Add in the scallions,

Cooked peanuts,

I’ve just fried the chillies,
